    Some national estimates suggest that as many as one-third of all cancers may be related to diet and nutrition. It seems simple to suggest that the food we eat might provide us with some measure of protection against cancer and other diseases, but growing research evidence says just that. The picture is far from clear, but this much is sure: The foods we eat make a difference in our health.

    In this section of the module, you'll have a chance to read about nutrition and cancer, explore some of the important chemicals that may be involved in anticancer activity, learn about the way researchers identify the chemical components in foods, and then put it all into action by studying actual recipes for the protective compounds in them. Finally you'll have a chance to prepare a recipe or a meal that includes some of that protection.
